We've always used a Betty Crocker recipe for muffins out of an old cookbook that my mom keeps in the cupboard.  I couldn't find the exact recipe when I went to make these the other day, but I found this one that's similar and just as delicious.

However, when I went to make them, I didn't have any brown sugar.  Boo.  I knew I could substitute white sugar, but they wouldn't have the same flavor.  So I dug the cinnamon out of my spice cupboard and got started.  Here's the recipe I used: (You'll also notice I divided everything in half)



Cinnamon Chocolate Chip Muffins

1/4 c (half a stick) butter, softened
1 egg
1/2 c milk

1 c flour
3/8 c sugar
1/2 Tbsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 milk chocolate chips

Melt butter either on the stove or in the microwave.  Add egg, milk, and melted butter to a mixing bowl and beat with a fork.

Combine flour, sugar, baking powder, and salt in a separate mixing bowl.  Add cinnamon.

Add the flour mixture to the milk/egg/butter mixture.  The batter should be a little lumpy and soft.  Add chocolate chips.

Spray muffin tin with cooking spray.  Spoon batter into tin until cups are about 2/3 full.

Optional:
Sprinkle a sugar/cinnamon mixture over the top of the muffins.

Bake at 400 for 18-20 minutes.
This recipe makes approximately 8 muffins.
