Halloween is my second-favorite holiday.  My first is the Fourth of July.  I think Halloween is so high on my list because it's my grandma's birthday, so it's always been a holiday that my whole family gets to spend together, even if it's a school night :)

I made these pancakes as a way to help me feel a little more cozy-festive, since I won't be able to make it home this year.  It's the first time I've ever had to miss Halloween at my grandma's house, and I'm a little bit sad about it-- especially since my mom's birthday is three days after that and I won't be home for that either.

Here's the recipe:

1 1/4 c flour
3 tsp baking powder
1 T sugar
1/2 tsp salt
1 egg
1 c milk
2 tsp cooking oil

Once I put a pancake on the skillet to cook, I put four or five pieces of candy corn on top.  Two minutes, flip, one minute, done.  That's it.  I'm sure store-bought pancake mix would be just as delicious as this recipe-- it's just the one that I grew up eating, so it's my favorite.
